The coffee
60% natural Brazil from Cerrado, 40% washed Colombia. Roasted to the start of second crack and dropped, which is darker than our filter roasts and considerably lighter than a supermarket espresso.
Brewing
18g in, 36g out, 28 seconds as a starting point. Give this one ten days from roast — espresso roasts need longer to settle than filter, and a fresh bag will gush and taste hollow.
